Chocolate milk is a drink prepared from milk (Fresh or powder), cocoa powder (often processed with alkali), sweeteners (usually sugar, dextrose of HFC syrup) and other ingredients including starch, salt, carragenan, vanilla flavor and artificial chocolate flavor.

The main ingredients of chocolate milk are milk (whole, partially skimmed or skimmed or milk powder), sugar and cocoa. Only a small part of Cocoa powder is dissolved in the liquid phase while the rest of solid particles remains suspended in the liquid phase. As these solid particles has the density more than the liquid phase, resulting into the settling of these particles after some times. As consumer prefer the homogeneous beverage so by addition of some stabilizer (carragenan or other) manufacture can avoid this settling of cocoa particles to make more acceptable homogeneous chocolate milk. Each manufacturer has its own combination of various stabilizers (some times emulsifiers) to stabilize their product to zero or minimum particle settling.
The purpose of this report was to see what various types of stabilizers different manufacturer are using, along with the other properties of products like, volume of packs, nutritional claims, appealing of pack, type of filling technology used for packing and etc. The other purpose of this report was to see the labeling standard (GSO 9/2007) implementation by each manufacturer.
The samples of various main manufactures (table 1) were collected from Lulu Hyper market and KMT in Salalah, Oman. Samples were then analyzed in Lab (A’Safwah Dairy plant lab). The Analytical procedures adopted for chemical testing were recommended standard procedures.
